Naturally Cured – what do we mean?
The process of curing the pork leg to make ham uses Naturally-occurring nitrates (mainly from celery). Therefore it’s not actually nitrate-free but the nitrates are from a natural source! We do make sure people understand the it’s shelf-life is less and it may discolour (go a shade of grey) once open. The taste is still delicious but it does have a slightly different texture.
