Ham is ready to EAT! It has been pickled (or cured) with our own recipe of herb & spices and then smoked using Australian Redgum woodchips…You don’t need to do anything - besides refrigerate until opening and then open, carve and eat OR if you like the flair of the festive season - our Hams are perfect for glazing (The beautiful fat layer… the caramelization…oh…heaven!) 

SIZES - HOW BIG ARE OUR HAMS?

Well it all goes back to how big were our pigs….  in a Pasture Raised situation and with Old Breeds - none of our pigs are the same!!  So, all of our LEGS are all different…Seeing as our products are all handcrafted, the weights of our products fall within a range.

Our FULL legs range in size from approximately 5kg to 6.5kg, price range $225 - $292

You will pay the balance owing on collection/delivery which will depend on the exact weight of the cut.

TWO CURE TYPES, TRADITIONAL OR NATURALLY CURED

Traditional - Contains a small amount of synthetic nitrates to help with the color and shelf-life - which some customers prefer with such a large piece of ham or want it too last for a couple of weeks **The vast majority of Ham in Australia contain synthetic nitrates

Naturally-Cured - Contains only NATURALLY occurring nitrates from vegetable extracts (No Numbers, No Nasties) BUT you do have to accept there could be some less than pink patches, it will oxidize like a glass of wine. It will change once opened and some discoloration may occur. Ideally it will be opened, eaten and enjoyed straight away. Best consumed within 7-10 days.
