Before it gets to the crazy festive season, Xmas planning for many retail businesses has begun months before. For a Pork producer this starts in March! We begin freezing legs in May to make sure we have enough Hams available for that very special day in December (And yes, it’s ok to freeze them as Pork, defrost, cure and smoke/cook them ready to eat!). We get a wide variety of questions about our Ham and Roast Pork options, we have done our best to answer them below but if you haven’t had your question answered please send us an email at orders@mcivorfarmfoods.com.au and we will get back to you.
Not all Hams are created equal…
Our Christmas Hams come ON THE BONE, we have Half leg and Full Leg options available in two different cures and two different size ranges, more on this below.
Ham is ready to eat, it has been pickled/cured with our very own custom recipe using real herbs and spices (no pre-mixed packet flavouring here!) it is the smoked with Australian redgum wood chips right here in our butchering facility.
You don’t need to do anything with it besides refrigerate until opening then carve and eat! Although if you like a festive flair our Hams are perfect for glazing. You can find tips on how to care for your ham here ……… and our glazed ham recipe here………
As you know our pigs are free-range, pasture raised animals, this combined with the fact that they are an old breed means that our pigs vary in size therefore our Hams vary in size. This is why you have the ability to choose a weight range and will only be charged for what you are getting (more details on pricing can be found below).

FAQs
Are the Hams Nitrate FREE?
Throughout the year we only sell naturally cured ham and bacon products which means they are cured/pickled with naturally occurring nitrates from vegetable extracts (NO numbers, NO nasties!) We do offer these at Xmas time as well as a traditional cure (more info below).
With our natural cure you have to expect there could be some less than pink patches, it will oxidize like a glass of wine - so it will change once opened and may have some discoloration. Ideally once they are opened they are eaten and consumed within 7-10 days.
Our traditional cured hams are only offered at Xmas time. They contain a small amount of synthetic nitrates to help with the colour and extend shelf-life. We have found some of our customers prefer having this option.
Are the products gluten free?
Yes, our Hams and Pork products are free from gluten, nuts and dairy although we are not certified. Our facility does not use any gluten or nut products.
Can I choose my Ham or Roast/Porchetta?
YES! If you collect from our Farm Gate Shop or the Lancefield Farmers market you will be given a couple to look at and choose from.
If you opt to have your Xmas order delivered you are able to leave us a ‘note’ when placing your order, e.g. “Hock end” or “smallest one available”.
Can I change or cancel my order?
Ideally we don’t want either of these things this to happen but also understand that sometimes things change. Orders can be cancelled up until Friday 5th December. This must be done in writing and emailed to orders@mcivorfarmfoods.com.au. All deposits paid will be refunded if order is cancelled before the 5th of December, after this date the deposit is non-refundable.
Any changes to orders will incur a $10 admin fee. This includes change of collection day/location or changes to order. A lot of time and effort goes into allocating Hams/Roasts to their pick up location, small changes may not seem like a big deal but they can throw a spanner in the works if they get missed!
Can I use my early bird voucher to pay the balance owing on my ham?
Where do you deliver to?
This year we are excited to be able to deliver throughout Victoria, New South Wales and most of Queensland. Home delivery has been one of our biggest challenges seeing as our product requires refrigeration, luckily for us we have been able to team up with Be Cool Couriers who have helped us get our Pork cross three states! To see if we can deliver to you, pop something in the cart, then head type in your email address and delivery address. If your address comes up then we can deliver!

Can I use my early bird voucher to pay my balance?
Your early bird voucher is valid from February 1st 2026 until June 30th 2026 and can be used at our farm gate shop and the markets we attend.
